Chakki Atta vs. Packaged Flour: What Your Roti Is Really Made Of

Packaged atta — even the premium-branded kind — is milled on high-speed steel roller mills that run hot enough to kill the wheat germ and strip out the bran. What remains is mostly endosperm starch, sometimes with artificially added vitamins to replace what milling destroyed.

What the stone chakki preserves

A traditional stone chakki grinds slowly at low temperature. The entire grain — germ, bran, endosperm — passes through together. The wheat germ oils that give fresh atta its nuttiness are not driven off. Bran fibres remain intact. The result: richer flavour, more fibre and a lower glycaemic response than refined flour.

The freshness difference

We grind every batch of Kripashi atta after your order is placed — never in advance. Buy it fresh, store in an airtight container and use within 3–4 weeks. Your rotis will be softer, your dough easier to knead and the flavour noticeably richer.
